Keto Bacon and Pecan Pinchos

TOTAL TIME: 15 minutes, plus 1 hour refrigeration time
SERVES: 12

Per serving: 184 calories, 6.7 g protein, 1.8 g carbohydrates, 16.9 g fat

INGREDIENTS:

  • 8 oz / .23 kg cream cheese

  • 1 Tbsp / 15 mL keto mayonnaise

  • 2 Tbsp / 30 mL sour cream

  • 1 cup / 236.6 mL cheddar cheese, shredded

  • 1 Tbsp / 15 mL ranch seasoning mix

  • 4 slices cooked bacon, finely chopped

  • ½ cup / 118.3 mL pecans, finely chopped

  • 3 Tbsp / 45 mL parsley, minced

DIRECTIONS:

  1. In a large bowl mix cream cheese, mayonnaise, sour cream, shredded cheese, and ranch seasoning. Fully combine.

  2. Refrigerate for 1 hour to chill.

  3. In a second small bowl, combine bacon, pecans, and parsley.

  4. Line a baking sheet with parchment paper. Once the cheese mixture is chilled, use a small scoop or two small spoons to portion out small cheese balls.

  5. Roll each ball in the bacon-pecan-parsley mixture until evenly coated on all sides.

  6. Return to the baking sheet and refrigerate at least 30 minutes before serving.
