Keto Bacon and Pecan Pinchos
TOTAL TIME: 15 minutes, plus 1 hour refrigeration time
SERVES: 12
INGREDIENTS:
8 oz / .23 kg cream cheese
1 Tbsp / 15 mL keto mayonnaise
2 Tbsp / 30 mL sour cream
1 cup / 236.6 mL cheddar cheese, shredded
1 Tbsp / 15 mL ranch seasoning mix
4 slices cooked bacon, finely chopped
½ cup / 118.3 mL pecans, finely chopped
3 Tbsp / 45 mL parsley, minced
DIRECTIONS:
In a large bowl mix cream cheese, mayonnaise, sour cream, shredded cheese, and ranch seasoning. Fully combine.
Refrigerate for 1 hour to chill.
In a second small bowl, combine bacon, pecans, and parsley.
Line a baking sheet with parchment paper. Once the cheese mixture is chilled, use a small scoop or two small spoons to portion out small cheese balls.
Roll each ball in the bacon-pecan-parsley mixture until evenly coated on all sides.
Return to the baking sheet and refrigerate at least 30 minutes before serving.
